Green Sauce

Serves: around 0.5/1 Ltr or so

It’ll marry with basically anything, especially mexican / spanish foods… but quite literally with anything savory.

Ingredients

  • 200-300g Corriander

  • 40g Chives

  • 100g spring onion bunches (only the green bits)

  • 2 x green chillis

  • 200-250ml lime juice

  • 0.5 x avocado

  • 100ml oil

  • 50ml mayo

  • 100ml honey

  • salt to taste

  • Xanthan Gum mixed equal parts oil - to stabilize

How do

Put everything in the fastest blender you’ve got (I prefer a nutribullet) and blast it until it’s smooth. No cooking required, but do make sure everything is clean, because soil doesn’t taste good.

Once everything is smooth, slowly add your xanthan gum bit by bit, until the sauce has a ketchy consistency. It’s REALLY easy to overdo xanthan gum, so take your time. This will just help to hold everything in suspension, and keep it saucy.
