Carbonara

Time: 15-20 minutes

Serves: 2-4, depending on your appetite

Ingredients

  • 250g Dried tagliatelle/spaghetti

  • 100g Grana Padano/hard cheese of choice

  • 6 egg yolks

  • 100g Pancetta/bacon bits

How To

  1. Boil pasta

  2. Stick meaty bits in non-stick frying pan. Medium heat - no oil necessary.

  3. Bang egg yolks in a mixing bowl and finely grate the cheese into it. Whisk together.

  4. When meaty bits are cooked, turn to high heat to crispify.

  5. When the pasta is done, strain it but keep some of the water.

  6. Add meaty chunks (with fat) and pasta to the saucy stuff and stir thoroughly.

  7. Add a splash of the pasta water until the sauce looks like double cream. Continue mixing throughout.

  8. Serve w/ black pepper. No salt necessary.
